     Glycogen figure - greater amount of branching = more soluble

 
 

 

      Cellulose figure - polymer of beta linked glycosidic bonds:
                                      
amylase which digests starch does not hydrolyze beta bonds &
                                       animals lack
cellulase, capable of hydrolyzing cellulose.
